Mango Lassi Overnight Oats.

Makes 2 portions

10 mins (+ overnight in the fridge)

 

A delicious little healthy bowl of sunshine to start your day. Utterly divine.

Ingredients.

90g/1 cup porridge oats, also called ‘old-fashioned’ or ‘rolled’ oats

1 tbsp chia seeds

1/4 tsp cardamom

100g/3/4 cup mango, fresh or frozen

120ml/1/2 cup water

100g/1/3 cup Greek yoghurt

1/2 tbsp honey/maple syrup, optional

Extra Toppings: (optional)

Greek Yoghurt

Fresh mango

Passionfruit

Lime zest

Dessicated coconut/coconut flakes

Almond butter

Equipment.

2x dishes/containers

Method.

  1. Blend all the ingredients apart from the oats. Taste and adjust sweetness with maple syrup/honey if needed (it will depend on how sweet/ripe your mango is)

  2. Mix with the oats and divide between bowls/containers

  3. Refrigerate overnight, or min. 4 hours. They will keep for up to 5 days

  4. Remove from the fridge and add your toppings before digging in!
